OMS/Vegan Basil Pesto Recipe
This is a staple in our house now, it's quick and easy to throw together and it's just so tasty and healthy!
Mix it through pasta, use as an accompaniment to dishes, or dip your raw vege or rice cracker into it. It's addictive!
- 3 cups fresh basil leaves 🍃
- 1/2 cup pine nuts
- 2 pinches of sea salt
- 2-3 fresh whole garlic cloves
- 1/3 cup extra virgin olive oil
- 1/4 cup of nutritional yeast
Throw it all in your food processor and blitz, scraping the sides down as you need to, until you reach a good pesto consistency like in my photo. A little chunky.
If it's dry for any reason I just add another glug or 2 of EVOO (extra virgin olive oil), and if you need a little more kick you can add in more lemon juice or salt, tweak it to your taste till it's perfecto!
Store in the fridge to eat that week or the freezer to save for later. Too easy!
